If you’re just looking for a simple, no-frills, easy way to use up your old bananas, this is it. The loaf was ready to go into the oven before it was done pre-heating, and I didn’t even need a mixer- just did it all in a bowl, old-school style.
Make sure and check your bread halfway through the baking process. Once your crust is a nice golden brown, cover the loaf with a foil tent to keep the top from burning (a pet peeve of mine with banana breads.)
Recipe adapted from Allrecipes.com
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup butter
- 3/4 cup brown sugar
- 2 eggs, beaten
- 6 mashed medium overripe bananas
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan and line with a parchment paper sling for easy removal. (I used a smaller 8×5 inch loaf pan and halved the recipe and baked for only 40 mins)
- In a large bowl, combine flour, cinnamon, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten, do not over-mix. Pour batter into prepared loaf pan.
- Bake in preheated oven for 45 to 60 minutes, until atoothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
