Sugar Cookie Bars with the BEST frosting EVER

Are you ever in the mood for soft, yummy sugar cookies with frosting and sprinkles, but you just don’t have the energy to roll out, cut out, and frost those individual cookies?

I give you your solution:

Frosted Sugar Cookies… in BAR form.

No more hassle, no more mess,  just the same soft sugar cookies but with a quarter of the work.

They’re so pretty too.

Especially with the sprinkles. 🙂

Recipe for bars adapted from A Little Bit Crunchy a Little Bit Rock n Roll I used a different frosting recipe, because hers called for shortening and I’m an all butter girl.

Ingredients:
1/2 cup unsalted butter, room temperature
1 cup sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking soda

Buttercream Frosting Ingredients:
1/2 cup unsalted butter, room temperature

1/2 tsp vanilla extract
2 cups powdered sugar
Pinch of salt
2-3 tbsp heavy cream

Directions:
1. Cream the butter and sugar together until fluffy.
2. Add the eggs, one at a time, mixing well after each addition.
3. Meanwhile, mix the dry ingredients together in a separate bowl.
4. Add the vanilla to the creamed mixture and then slowly add the dry ingredients.
5. Press into a greased 13 x 9 inch pan with a foil sling, and bake at 375F for 10-12 minutes.
6. Cool and frost (see directions below).

Buttercream Directions:

1. In a large mixing bowl, beat butter on medium-high speed for about 2-3 minutes. Add vanilla extract and continue to beat until light and fluffy. Slowly beat in powdered sugar, 1 cup at a time until fully incorporated. Add salt. Beat for an additional 1-2 minutes until smooth. Add heavy cream, 1 tbsp at a time. Continue to beat on medium-high speed for another 1-2 minutes until desired consistency as been met. Add food coloring if desired.

Spread over cooled bars.  Add sprinkles if desired.  Chill and serve.

5. Chill and cut.
