| A healthier version of Melt in your mouth Chicken Breast |
This chicken has been floating around all over Pinterest for weeks now. According to everyone, it really DOES melt in your mouth and is quite delicious. Unfortunately, the chicken breasts are dunked in mayonaise, which just can’t be good for your thighs, and frankly, just has the ring of disgusting to it (in my opinion) The good news is, there is a much healthier way to get the exact same results and flavors.
Last night, I made the healthier version, subbing non-fat Greek yogurt for mayonaise, and making a couple of other changes as well and it really was delicious. I haven’t tried the mayo version, but I doubt you’d know the difference and this is SO much better for you.
I served this with fresh steamed cauliflower and both my husband and my two year old daughter gobbled it up. It was yummy.
Ingredients:
4 boneless, skinless chicken breasts
5oz non-fat plain Greek yogurt
1/2 cup of shredded parmesan cheese (fresh, not from the green can)
2 garlic cloves
1 tsp salt
1/2 tsp pepper
1/4 tsp paprika
Directions:
Preheat your oven to 425°
Throw everything but the chicken into a food processor or blender and puree until smooth.
Line a casserole dish with foil. Spread half of the mixture onto the foil, and place the chicken breasts on top. Spread the other half of the mixture on top of the chicken breasts, coating completely.
Bake for 30-45 minutes (depending on thickness of chicken) until juices run clear and the top is slightly crispy brown.
