Super Moo Muffins (or, Banana Muffins- if you’re a grown up)

I don’t know about the rest of you, but my two year old daughter watches more than her fair share of Mickey Mouse Clubhouse.  As a result, I watch more than my share as well.

One of our favorite “jingles” if you will, from the show, is the one where Clarabelle the Cow is making “Super Moo Muffins- made with much more Moooooooooo.”

Last night, Daphne wanted to make Super Moo Muffins.  So we did.

I don’t know what makes these Moo Muffins.  Mostly I guess, because I had three overripe bananas to use up, and because that’s what we were makin’. We were calling the bananas the “moo” and we had a ball adding it a bit at a time until we had added a whole lot of moo.

Of course, we sang the song too.

These banana (I’m sorry, these Super Moo Muffins) are one of my favorites I’ve ever made, ever.  Warm out of the oven they were TO DIE FOR.  A crispness to the top made them all the better and they were packed with sweet banana flavor.  They were great the next morning as well.

So, if you have a Mickey Mouse Clubhouse fan in your house, make sure you make these muffins.  And if you don’t, well, make them anyway.  Because they were ready to go in the oven before my oven had finished preheating, and they were delicious.

Ingredients (makes 12 muffins)

1 1/2 cups all-purpose flour

1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup melted butter

Directions:

Preheat oven to 350°.  Line a muffin pan with paper liners.

Mix together butter, sugar, bananas and egg.  Add dry ingredients and mix until just combined.  Fill muffin tins 3/4 of the way full.

Bake for 12-18 minutes until a toothpick inserted into the center comes out clean.
