Leprechaun Catching Cookies

My daughter and I are trying to catch a leprechaun.

We have carefully constructed a leprechaun trap…

We’ve studied all there is to know about them….

And we’ve made these delicious leprechaun catching (read: green oatmeal peanut butter cookies) to entice them into our trap.

I am forever seeing St. Patrick’s Day cookies on Pinterest, but I like my cookies simple.  And this is my very favorite cookie recipe of all time.  I have done it with chocolate chips, I have done it plain, I have done it with crunchy peanut butter and with creamy…

But I’ve never made them green before.

This soft, sweet, slightly salty cookie is the absolute perfect after school snack.  It is festive for the holiday, but most importantly, it tastes good.

Who knows, you may even catch a leprechaun.

INGREDIENTS:
1 cup butter, at room temp
1 cup brown sugar
3/4 cup white sugar
1 cup peanut butter (I use crunchy)
2 eggs
1 tablespoon green food coloring
1 1/2 cups of flour
2 tsp baking soda
1 tsp salt
1 cup quick cooking oats
DIRECTIONS:
Cream together butter,sugar, eggs, food coloring, and peanut butter. Add dry ingredients. Mix. Add oats last, and mix again.  Roll into one inch balls and then roll in granulated sugar.  Sprinkle with more granulated sugar.
 Bake at 350° for about 8 minutes. Do not overbake.
These cookies really spread, so I only put 9 to a cookie sheet.
