Coconut Fruit Dip

I wish I had better pictures of this fruit dip, because it was absolutely amazing. Unfortunately, I’m notorious for making delicious food for parties and then forgetting to take good pictures of it.  It was even better than that marshmallow creme fruit dip, which I happen to have a very high regard for.  I can honestly say I didn’t miss the marshmallows for one moment.

My kids birthday parties are exactly one week apart- the great part about this dip is that you use exactly half a package of everything, so I had all the ingredients to use the following week to make more dip.  For an absolutely insane amount of dip, you can double the recipe as written below.

Also, this stores really nicely.  I was nervous to make it the day before, because of the cool whip, but I had no issues.  I just gave it a mix and was able to enjoy it for several days.

Recipe from Dessert Now, Dinner Later

Ingredients:

  • 4 oz cream cheese
  • 1/2 (15oz) can Cream of Coconut (Not coconut milk! Find this in the aisle with the margarita mix & other mixers.)
  • 1/2 (8oz) tub Cool Whip

Directions:

  1. Whip the cream cheese with the cream of coconut in a stand mixer until all lumps are gone.
  2. Remove paddle, & fold in cool whip.
  3. Serve with fruit or graham crackers.
