I wanted to try making a new and fresh kind of salsa for a family BBQ, so I decided to try and do a mango one. This is what I came up with, and it was surprisingly good with both tortilla chips AND as a relish on top of salmon.
I liked that it had the sweetness from the mango and the strawberry, but it wasn’t overwhelmingly sweet like a lot of mango salsas are. The onion and cilantro and tomato balanced it out really nicely and I really enjoyed it.
I hope you do too. π
Ingredients:
1 mango, diced into small squares
1/2 pint of strawberries, diced into small squares
3 roma tomatoes, diced into small squares
1 bunch green onions, diced
1/2 cup of chopped cilantro
1/2 tsp salt
2 tsp lemon juice
1/4 tsp pepper
Directions:
Mix everything together in a bowl. There you go! π
Best to eat within a day or two of making.
