Eggnog Muffins

Hi, my name is Shannon and I’m a Christmas junkie.  I always buy eggnog immediately when I see it in the store.  I don’t even like to drink it really, I have to thin it out with 7-up, and we always have lots left.  This is a great way to use it up!  These muffins are delicious, and they smell and taste like eggnog!

Ingredients

2 eggs, beaten
1 cup eggnog
2 teaspoons rum
1 teaspoon vanilla extract
1 cup white sugar
1/2 cup butter, softened
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg

Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease muffin tin, or prepare with muffin cups
Blend together the eggs, eggnog, rum extract, sugar, vanilla and butter.

Sift together the flour, baking powder, salt and nutmeg. Add to eggnog mixture and stir just enough to moisten; pour into prepared pan.

Bake muffins about 20 minutes, or until a tester inserted in the center comes out clean.
