1-1/2 cups all-purpose flour
3 teaspoons pumpkin pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1-1/2 cups granulated sugar
1/2 (15 ounce) can canned pumpkin
1/2 cup vegetable oil
1/4 cup orange juice
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 x 5-inch loaf pan, or an angel food cake pan.
Combine flour, pumpkin pie spice, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, vegetable oil and orange juice in large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir just until moistened. Spoon batter into prepared loaf pans.
Bake for about 45 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.
