Mimi’s Cafe’s Carrot Bread

When we go to Disneyland, one of our must-eat places is Mimi’s Cafe.  Not to be confused with Millie’s Cafe, which is quite unappetizing, and on the same block, Mimi’s offers delicious food at very reasonable prices.  There are two BIG reasons that I love Mimi’s.  One: They have the best corn chowder that has ever been made (I have the recipe and make it often– I will post on the blog one of these days)  And two: They give you a delicious bread basket at the beginning of your meal with sourdough, french, rye, and this delicious sweet carrot bread.  Here is the recipe.  Enjoy. 🙂

Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup vegetable oil
1 cup brown sugar
3 eggs
1/2 cup chopped walnuts
1/2 cup crushed canned pineapple, drained
1/2 cup raisins ( I plump raisins in a cup of boiling water for about a minute before I bake with them)
1 cup finely shredded carrots

Directions:
Sift first five ingredients into a mixing bowl.

In a separate bowl, whisk together the oil, sugar and eggs.

Stir the liquid mixture into the flour; mix well. Ad the next four ingredients; stir again.

Grease and flour a 9-inch square pan or four mini-loaf pans. Fill the pans 2/3 full with batter. Bake at 350 degrees F for about 30 minutes. Mini-loaves take about 20 minutes.
