Alan Kimball’s Famous Potato Salad

My Dad’s Potato Salad

My Dad makes the BEST potato salad anywhere.  I absolutely hate sweet potato salad.  This recipe is so simple and so good, and it is always a hit wherever I take it.  My Dad hates onions, so his recipe doesn’t have onions in it, but I add them because I like ’em. 😉  This is a quick and easy potato salad recipe that is miles above the rest.   A great recipe for BBQ’s, a great side for burgers or any other summer dinner.

Ingredients:
5 large russet baking potatoes
12 hard boiled eggs
1 1/2 cups low-fat mayonaise
1 tsp yellow mustard
1/4 cup diced red onions
1 cup diced dill pickles
salt & pepper to taste

Directions:
Peel potatoes and cut them into quarters.  Boil them in a large salted pot of water for about 20 minutes, until soft (but not too soft– you don’t want mashed potatoes)  Hard boil your eggs.  Let both eggs and potatoes cool COMPLETELY before starting work on anything else.

Dice your cooled potatoes and eggs into half inch pieces.  Put into a big bowl.  Add mayonaise, mustard, onions, pickles, salt & pepper and mix together.  Refrigerate until read to serve.
