Pumpkin Bars with Cinnamon Cream Cheese Frosting

Pumpkin bars: Not just for fall!  One of my very favorite desserts.  I decided to whip up a batch of them tonight for my husband’s co-workers.  The hint of cinnamon in the basic cream cheese frosting compliments the pumpkin perfectly.  The best part? You probably already have all of the ingredients in your pantry.  This recipe makes a 9×13 pan so there will be plenty for to share!

Ingredients:
2 eggs

1 cup sugar
1/2 cup vegetable oil
1 cup canned pumpkin
1 cups flour
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda

Frosting:

3 oz cream cheese (room temperature)
3 tbsp butter (room temperature)
2 cups powdered sugar
1/2 tsp vanilla
1/2 tsp cinnamon

Directions:
Preheat oven to 350 degrees F. Beat eggs, sugar and oil until smooth. Add pumpkin. Mix until blended. Add remaining ingredients. Mix.

Grease the bottom of a 9×13 inch pan. Pour batter in pan and bake for 20-25 minutes, until toothpick inserted in center comes out clean.

Mix together all frosting ingredients and spread over cooled cake.  Enjoy!
