Soft Molasses Cookies

I went searching for a recipe for Starbucks Molasses Cookies (my favorite) and I tweaked and combined a couple of different recipes to come up with this one.  I think they are about as close as you could possibly get to the real thing. πŸ™‚ They are soft and chewy and completely delicious.  *Note* This dough needs a 2 hour chill time before baking.

Rolled In Sugar

Ingredients:
3/4 cup shortening
1 cup packed brown sugar
1 large egg
1/2 cup molasses
2 1/2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons ground cinnamon
2 teaspoons pumpkin pie spice
Granulated sugar (for rolling)

Directions:
Cream together shortening and brown sugar.  Stir in egg and molasses and mix well.  Fold in dry ingredients and stir.  Cover and chill for two hours.

Preheat oven to 350Β°.  Roll dough into small balls and roll in white sugar.  Place on lightly greased cookie sheet (or sheet lined with parchment paper). Bake for 8-10 minutes. Enjoy!
