Warning: If you’re a big fan (like me) of all things cinnamon/sugary, if you’re a lady and it’s your time of the month, if you’re depressed or dieting, or just don’t want to gain 10 pounds, then don’t read any further. It’s too late for me, but you can still CLOSE THIS WINDOW! SAVE YOURSELF! This quick and easy snack is simply too delicious not to make over and over.. and over. And you’ll eat the entire pan. 🙂
These delicious, moist on the inside, crispy on the outside snacks are very remniscent to me of a churro. They have the comforting taste of cinnamon toast, and would be the perfect (albeit occastional) after school snack for your kids. They would also be perfect for a bridal shower, baby shower, or party. They took about 10 minutes to prepare, and you probably already have all of the ingredients in your pantry.
Recipe originally from Circle B Kitchen
12 slices of very soft, fresh white bread
1/4 cup (half a stick) melted butter
cinnamon sugar (1/2 C sugar + 1 teaspoon cinnamon)
Preheat the oven to 375 degrees.
Cut the crusts from a slice of bread and roll until very thin. Spread both sides of the bread with melted butter and then sprinkle one side with the cinnamon sugar, making sure to cover very well.
Fold each side into the middle and then gently roll up and place in a buttered mini muffin tin.
Sprinkle with a little more cinnamon sugar. Alternately, you can fold the bread into a triangle, and then fold into another smaller triangle and place on a parchment-covered baking sheet.
When all of the rolls are made, bake for 15 to 20 minutes, or until they are just starting to turn golden brown and get a little crisp. Remove from the muffin tin to cool slightly before serving.
These freeze really well. To reheat, place briefly in a microwave to thaw and then bake in a low oven (250 or 300 until warm and slightly crisp. Alternately, you can reheat them in foil in the oven.
