Salmon Pasta Salad |
We had a BBQ at our house last night so my parents could meet my brother’s lovely new girlfriend, Katherine. My dad BBQ’d some amazing salmon and he left me all the leftovers so I decided to make a salmon pasta salad for dinner with it tonight. It. Was. Awesome.
INGREDIENTS:
1 lb medium shells pasta
2 cups of leftover cooked salmon (you could also use canned salmon)
1 cup of asparagus, chopped
1 cup of brocoli crowns
1 red bell pepper
3/4 cup of Caesar Salad dressing
1/4 cup of red wine vinegar
salt, pepper, and garlic powder to taste
DIRECTIONS:
Cook pasta in a large pot of salted water. Drain and let cool completely. Meanwhile, chop up the asparagus and brocoli. blanche it in a pot of boiling water for one minute. Drain and cool. Chop up bell pepper. When everything has cooled, combine pasta, veggies, and salmon into a large bowl. Mix with the dressing and vinegar. Taste. Add salt, pepper, and garlic powder if needed.
This recipe tastes best if you let the flavors marry for a while. The longer it chills the better it tastes. Enjoy!
