Low calorie grilled chicken sandwich |
This low calorie chicken sandwich is a staple for me when I am dieting. A grilled chicken breast is topped with American cheese, lettuce, onion, and tomato and sandwiched in between a soft English muffin. Not only is it low calorie and very filling, it is also extremely yummy. It’s pretty much the only time you get to have cheese when you’re dieting, too. When my now-husband and I were dieting before our wedding we ate these sandwiches for dinner almost exclusively. Bonus: It takes about 10 minutes total of prep time.
This recipe yields two servings. Calories listed below are per sandwich.
Ingredients:
1 boneless skinless chicken breast (100 calories)
1/2 tsp olive oil (30 calories)
Salt, pepper, and garlic powder to taste
2 fork split English muffins (110 calories)
2 slices of American cheese (45 calories)
Lettuce
Onion
Tomato
Low-fat Mayonaise (30 calories)
Mustard
Total Calories per sandwich: 315
Directions:
Preheat oven to 450°. Pound out your chicken breast thin. Season it with olive oil, salt, pepper, and garlic powder and place it on a baking sheet lined with foil. Place in preheated oven and cook until juices run clear, about 6 minutes (depending on how thin you pounded it)
Toast English muffins, and spread mayo and mustard on each side, and put lettuce, onion, and tomato on one side. When chicken is done, cut the breast in half and place a slice of cheese on each half of the hot chicken.
Put together into a sandwich and enjoy!
