Good Old Fashioned Pancakes

Homemade pancakes

I wanted to make my daughter pancakes for breakfast this morning but I was out of Krusteaz.  Luckily for me, homemade pancakes are super easy to make and most people will have all of the ingredients in their kitchen.  For all of the baking that I do, I have never actually made homemade pancakes before today.

I don’t think I’ll ever buy pancake mix again.  These were the best ever.  Definitely worth the extra 3 minutes of effort.  And of course, Daphne gobbled them up.

Ingredients

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

Directions

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly buttered griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

  1. Hi Carleen, these pancakes are on the fluffy side. I've never tried to make dense pancakes, but I'm pretty sure the fluffy factor comes from all the baking powder. I would experiment by adding less, might make them more dense. 🙂
