|Caprese Tortellini Pasta Salad|
I was sick yesterday, so instead of meatless Monday, we’re having meatless Tuesday today for dinner with this light and refreshing Caprese Tortellini Pasta Salad.
There is nothing not to like. Cold, cheese-filled tortellini, tossed with Mozarella Fresca, cherry tomatoes, red onion, cucumber, and basil. All tied together with a balsamic vinaigrette.
The perfect summer dinner. Quick, light, and easy! Enjoy!
9oz cheese filled fresh tortellini (in the refrigerated section of your grocery store)
1 cup mozzarella fresca (any size ball is fine)
1/2 pint cherry tomatoes, sliced in half
1/4 cup finely diced red onion
1/2 cup diced English cucumber
1/4 cup chopped basil
1/2 cup balsamic vinaigrette dressing (I use Newman’s)
Cook tortellini using package instructions and set aside to cool. Once cool, add mozzarella and vegetables and toss with vinaigrette. Top with basil.
Let chill for a couple of hours before serving. Enjoy!
