Tis the season for zucchini!
I have been making this recipe for years. Back in the day, when I was in human resources, and not in the business of wiping noses and changing diapers, I used to make it all the time in the summer and bring it in for my co-workers. They loved it.
Sometimes, I add chocolate chips. Sometimes, I add walnuts. Today, I just felt like making it plain.
This recipe makes two loaves. It freezes really well though, so if you don’t need two, wrap it up in plastic wrap really tight, put a ziplock bag over it, and stick it in the freezer.
You can spread butter on it, but it really doesn’t need it.

I only use 2 cups of sugar and it turns out great. Also, you can add an 8 oz. can of crushed pineapple(drained). It keeps it moist, and adds to the flavor.
I forgot about this recipe! I used to make the one from the allrecipes site all the time! I made this last night with my kids and made the following tweaks: We used white whole wheat flour for half of the flour. I left out the cloves (since I only had whole cloves and didn't feel like grinding them). I used coconut oil (since we prefer it). Oh and 2 cups of sugar was plenty. We made this into muffins (25 mins).
So glad you both enjoy this recipe, thanks for the comment and for visiting.
Do you need to wring out or drain the grated zucchini?
No! Almost all of the moisture in the spread comes from the zucchini! You will need it.
