
Oh, I cannot wait for Easter. I love all the holidays, and Easter gets one of the top spots with me. I love dyeing Easter eggs and making cookies for the Easter bunny.

I love egg hunts, and brunch and dinner with family, and placing Easter Bunny footprints throughout the house. I love carefully choosing each child’s stuffed & chocolate bunnies for their Easter baskets.

I love the tulips and the cherry blossoms outside. I love the excitement on the kids’ faces as they compare how many eggs they found with their cousins. I love the cinnamon rolls and the coffee and watching my kids discover their baskets in the morning.

What is not to love about Easter?

These are the ultimate lazy Easter Cookie. Very minimal effort. 4 ingredients, 10 minutes, bam. Done. Cute little chick Easter cookies.

My kids had a blast making and eating these and you will too.

Recipe adapted from The Gold Lining Girl
Ingredients:
1 box lemon or yellow cake mix
2 eggs
1/2 cup shortening
yellow food coloring (optional)
orange frosting for feet & beaks
marshmallows with sprinkles, mini chocolate chips, or m&ms for eyes, whatever you have on hand.
Directions:
Preheat the oven to 350° and line a cookie sheet with parchment paper.
Place cake mix, eggs, and shortening into the bowl of a mixer and mix until smooth. Add a few drops of yellow food coloring to make the color more vibrant.
Roll dough into two balls per chick, one larger ball and one smaller. Place the balls just touching each other with the smaller ball on the top, like so:

Leave lots of space, the cookies will spread. I did 8 chicks per cookie sheet.
Bake for 10 minutes. Remove from oven and cool completely. Decorate with eyes and feet. You can “glue” on the eyes with extra orange frosting. Enjoy!
