Homemade Apple Pie Lara Bars {Gluten-free, Whole 30, Paleo, Vegan}

So, it’s no secret if you follow this blog that I’ve done a few Whole 30’s. While I’ve never adapted the lifestyle the way some people do, one thing that I’ve always kept buying long after I tossed the coconut aminos and the plantain chips, is the Lara Bars. Bless. I love ’em. They are the perfect, healthy, filling breakfast.

But they are so expensive, amiright??? $1 a piece at least. Well, behold, you can make your own, and not only is the flavor exactly exactly, exactly like the store bought bars, somehow they are better. They are fresher, the flavors are out of this world, and you can make a whole 8×8 pan for like ten bucks. Win!

Did I mention how easy they are? You literally just throw all the ingredients into your food processor and press them into a pan. I refrigerated mine overnight, cut them up, and wrapped each one up and stuck them back in the fridge. Nothing not to like. If you don’t have a food processor, a high powered blender like a Vitamix will also do the trick.


  • 12 pitted Medjool dates (I buy mine at Trader Joe’s)
  • ¾ cup raw almonds
  • ¾ cup unsweetened dried apples
  • ½ cup walnuts
  • ⅓ cup golden raisins (unsweetened)
  • ¾ teaspoon ground cinnamon


  1. Add the dates to a food processor or high-powered blender like a Vitamix and blend. Add the dried apples, raisins, almonds, walnuts, and cinnamon and pulse until combined – there should be small bits of nuts and raisins remaining, but not too big.
  2. Press the dough into a small pan (I used an 8×8) lined with parchment paper. Refrigerate for at least an hour (or overnight) and then cut into squares.
  3. Store in an airtight container for up to a month in the fridge. These also freeze well. Enjoy!
