Simple Strawberry Shortcake

Strawberry shortcake is one of my very favorite summer desserts.  Often, I make it with homemade angel food cake, but my very favorite way is with a simple shortbread scone.  Last night, I made them for my sister’s birthday.  This is a very easy dessert that takes about 10 minutes to prepare, and looks so beautiful.  This recipe makes 8 large strawberry shortcakes.

Ingredients:

One box of Fisher’s Original Fair Scone Mix
2 lbs of fresh strawberries
1/3 cup of sugar
1 cup of heavy whipping cream
1/3 cup of sugar
1 tsp vanilla extract

Directions:
Prepare scone mix as directed.  Separate into two balls, flatten to about 2 inches and cut each ball into quarters, diagonally.  Place on baking sheet and sprinkle with sugar.  Bake for 8-10 minuts.

Slice strawberries and mix with 1/3 cup of sugar.  Refrigerate until serving.

In a mixer, combine whipping cream, 1/3 cup of sugar, and vanilla until stiff peaks form.

When ready to serve, cut scone in half, and fill with strawberries and whipped cream.  Top with additional whipped cream.
