Chicken Salad Crostinis

Another simple appetizer.  I usually make this chicken salad using red seedless grapes, but today I had some leftover English cucumbers, so I chopped those up small and used them instead.  You could also use celery if you have it.  It’s a delicious, miniature open faced chicken salad sandwich.  Super easy, super yummy.

1 French Baguette
1 large can of chicken
1/2 cup mayonaise
1/4 cup of chopped cucumber, red seedless grapes, or celery
1/4 cup of slivered almonds
salt & pepper to taste

Cut the baguette into 1/2 inch slices.  Mix all remaining ingredients together.  Top each baguette with a scoop of chicken salad mixture.  Enjoy!
