No-Bake Chocolate Peanut Butter Oatmeal Cookies

No-Bake Chocolate Peanut Butter Oatmeal Cookies (Mountain Bars)

I absolutely love these fudgy, no-bake cookies, and you can whip up an entire batch in 15 minutes.  Also called mountain bars, this delicious cookie is made entirely on the stove top and then cooled.  It is the PERFECT cookie to whip up when you are in the need for something fast and sweet. 

The delicious peanut butter flavor really comes through strong.  I like to use crunchy peanut butter, just for a little bit of crunch in the cookie, but you can also use creamy.  Make sure you use QUICK cooking oats.  If you use regular rolled oats, the hot liquid won’t have enough time to cook them and your cookies will be super chewy.

Ingredients:

2 cups white sugar
1/4 cup unsweetened cocoa powder
1/2 cup butter
1/2 cup milk
1 pinch salt
3 cups quick cooking oats
1/2 cup crunchy peanut butter
1 teaspoon vanilla extract

Directions:

Mix sugar, cocoa powder, butter, and milk in a large saucepan (use non-stick if you have it, you’ll have a much easier time cleaning your pan)

Bring mixture to a boil, and boil one full minute.

Remove from heat.

Stir in peanut butter first, until melted.  Then add vanilla and oats.

Drop by teaspoonfull onto wax paper and let cool.
