Cheesy Chicken Broccoli & Mushroom Casserole

A quick and easy staple recipe.  This recipe is a great way to hide brocoli for the kids.  Makes a ton of food and great as a leftover!

Ingredients:
3 cups of cooked rice (white or brown)
1 family size can of Cream of Mushroom Soup
1/2 cup of mayonaise
1/2 cup milk
2 chicken breasts, cooked and cubed
2 cups of broccoli, chopped
1 cup of diced onion
2 cups of sliced mushrooms
1 tsp garlic powder
3 cups of cheddar cheese, grated & divided
Salt & Pepper to taste

Directions:

In a large pan, cook the onions and mushrooms until the onions are translucent and the mushrooms are browned.  Remove from heat.   In a separate pan, combine cream of mushroom soup, mayonaise, milk, garlic powder, 2 cups of cheese, garlic powder, and salt & pepper.  Stir constantly until cheese is melted.

In a large bowl combine cooked rice, cooked chicken, uncooked broccoli, mushrooms, onions, and prepared sauce.  Spread into a 9×13 casserole dish and top with remaining cheese.

Cook in 350° oven for about 30 minutes until cheese on top is cooked and bubbly.
