I always love it when I can carry over meals that I enjoyed in my childhood and make them for my family. English muffin mini-pizzas are an example of one of those dinners.
Who’d have thought that a little English muffin would make the PERFECT pizza crust (not to mention the perfect serving size?) for a delicious pizza? This is great “diet pizza” – you can have two (one full muffin with all the trimmings for about 240 calories, depending on what toppings you use, and totally feel full and fabulous afterwards.
Oh, and what kid doesn’t like to put their own pizza toppings on their own dinner? Set up a little topping bar, sauce and cheese those English muffins, and then let the kids go to town on their own toppings- they will love it!
These are a great food for a slumber party with a whole bunch of kids too- so much more affordable than ordering pizza, and so much more fun, too!
Mozarella Cheese (tonight, I used 3 cheese Mexican blend because that was all I had)
Toppings! (turkey peperoni, pineapple, and basil are some of our staples)
Preheat the oven to BROIL.
Split the english muffins in half and put about a tablespoon of pizza sauce on each one. Add cheese and then toppings, and then just a tad more cheese.
Broil until cheese is bubbly and muffins are slightly browned. Enjoy!
