Pork and Apple Meatballs (Ten Dollar Dinners)



I was in line at the grocery store last week, and during the wait, like usual, I flipped through the various recipe books in the check out line.  I saw this recipe in one of them, and it looked so good that I pulled out my phone and took a picture of the recipe (there wasn’t much else in there that I wanted, or I would have just bought it- I buy way too many of those things)  So, it’s terrible, but I’m not even sure where I got this recipe from, because I can’t remember which magazine it was.  But it is so, so good.

Pork and apples are one of those perfect combinations.  Especially for the fall.  This makes a great fall dinner, or an amazing appetizer for football season!  The pork flavored stuffing gives it a really yummy flavor.

We had these for dinner, served in homemade sweet & sour sauce with pineapple and sides of pasta and broccoli.  Plenty for our family of four, with leftovers to boot! Oh, and this dinner cost a whopping $7 to make- a $10 dinner!

Ingredients:
1 lb of ground pork (you could also use pork sausage)
1 1/4 cups pork flavored stuffing mix (I used Stovetop)
1/2 cup chicken broth
1/2 cup diced apple (I used Gala, you could use HoneyCrisp or any other sweet apple- don’t use a tart one like a Granny Smith)
1/2 cup diced onion
1 egg
1 1/2 teaspoons mustard
1/2 cup cheese (I used Monterey Jack, the recipe called for Cheddar- whatever you have on hand)
1 tsp salt

Directions:
Preheat the oven to 350°.  Line a baking sheet or jelly roll pan with foil, and spray with non-stick cooking spray.

Mix all ingredients together in a large bowl, using your clean hands to mix it and really incorporate it well. 

Form into even sized balls (small ice cream scoop works great for dinner sized balls, a tablespoon sized ball is great for an appetizer) and place on baking sheet.  Cook for about 20 minutes (depending on meatball size) until meatballs are no longer cooked in the middle.

Serve with either BBQ sauce or, homemade sweet & sour sauce, like I did.
