Claim Jumper’s BBQ Chicken Salad

I love, love, love two things at Claim Jumper.  Their chicken tortilla soup, which I have yet to try to duplicate, and this salad.

If you’ve never tried it before, I will try and describe it for you.  Crisp, chopped lettuce, carrots, green onions, cilantro, corn, and black beans, tossed with ranch dressing, and surrounded by tomatoes.  Then, topped with grilled chicken drizzled with BBQ sauce, and crispy tortilla strips.

It is bomb.  And easy.  Give it a try!

Ingredients:
(Makes two Claim Jumper sized or four regular sized salads)
1 Romaine heart, chopped small
2 carrots, chopped
4 green onions, chopped
1/2 cup chopped cilantro
2 roma tomatoes, chopped
2 grilled chicken breasts
1 cup of black beans
1 can of shoepeg corn (or one cup of frozen, thawed corn)
Your favorite ranch (I made it with a Hidden Valley ranch packet) dressing
BBQ sauce for drizzling (I like Bullseye)
Crispy tortilla strips (I made these by slicing a flour tortilla thin, and then frying them up in a little oil)

Directions:
Combine lettuce, carrots, green onions, cilantro, black beans, and corn into a large bowl.  Toss with ranch dressing.  Place a portion on a plate, and surround with tomatoes.

Top with grilled chicken breasts, and drizzle with BBQ sauce.  Finally, add tortilla strips to the top.
