Peanut Butter Peek-a-boo Cookies Okay, it’s the first week of November, so most of us have a ton of Halloween candy that we need to get OUT OF OUR HOUSE NOW!!!

My kids are 3 1/2 and 1 1/2, so this is the first year they have really brought in a good haul.  So now it’s time to get rid of it all!

I first had these candy bar filled peanut butter cookies when an old co-worker of mine used to bring them to work.  Her recipe was a secret one, and she wouldn’t give it out, but I managed to come up with one on my own.  It’s basically just a super soft peanut butter cookie recipe with a mini fun-sized candy bar inside.

You can use ANY chocolate candy bar.  I have used Twix, Butterfingers, Snickers, Peanut Butter Cups, Rolos, Crunch Bars, 2 Musketeers bars… My favorites are peanut butter cups and Butterfingers.  Peanut butter on peanut butter with melty chocolate.  How can you go wrong with that?

Anyway, bake up a batch or two of these cookies and bring them in to work, or send them into work with your husband, like I will.  It will get at least some of that candy out of your house. 🙂

Ingredients

1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup butter, softened
1 egg
1/2 cup peanut butter
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Sugar for rolling
20 mini-fun-sized candy bars (or 10 fun sized bars cut in half)

Directions

Cream butter, sugar, eggs, and peanut butter.  Add dry ingredients to mixture and mix well.  Form a ball of dough around each candy bar.  Roll ball in sugar.
Place 4 inches apart on ungreased cookie sheet.  Bake at 350 degrees for 13-15 minutes

Cool for 10 minutes before serving.

*Candies with carmel will spill out during baking.
