Nothing better than sweet summer corn, my friends! Nothing!
This corn salad is proof that sometimes the very best things to eat come from the simplest ingredients. It comes together, ready to eat in a matter of minutes, and it is so, so, so, so, so good.
My family loves to have this on the side with a nice steak or grilled chicken thighs. It’s a perfect mix of starch and veggies, and really the only side you need. Make this for a summer dinner or bring it to your next BBQ.
Ingredients:
5 ears of sweet white corn
1 large or two small avocados, diced
1 pint cherry tomatoes, cut in half
1/2 cup red onion, diced finely
1/4 cup chopped fresh cilantro
3 tablespoons red wine vinegar
2 teaspoons olive oil
1 tsp fresh lime zest
2 tsp fresh lime juice
salt and pepper to taste
Directions:
Cut the corn off the cob and place it in a pot of boiling water for exactly one minute. Drain and run the corn under cold water. Place in your salad bowl.
Add the onion, tomatoes, avocado, vinegar, oil, lime juice and zest, and salt and pepper. Mix well and top with cilantro. Enjoy!
