Threw this dinner together on the fly, with fresh zucchini from our garden, chicken from the freezer, and pasta from the pantry. Turned out delicious, I will definitely make it again.
INGREDIENTS:
3/4 Cups of orzo pasta
2 1/2 cups of water
6 cubes of chicken bouillon
1 tsp of olive oil
2 chicken breasts, cubed
2 medium zucchinis, cubed
3 cloves of garlic, minced
1 tsp garlic powder
salt & pepper to taste
1 cup parmesan cheese
parmesan cheese for topping.
DIRECTIONS:
Boil water with 4 of your chicken bouillon cubes. Once water is boiling, add orzo pasta and cover. Turn heat down to low and cook until pasta is cooked to your liking.
In a separate pan, heat olive oil over medium heat. Add garlic and chicken & seasonings (including two crumbled chicken bouillon cubes). Stir constantly until chicken is cooked. Add cubed zucchini. Do not overcook zucchini. Drain pasta and add to mixture. Add about a cup of parmesan cheese & stir. Top with more parmesan
