Today I had two very ripe bananas that I wanted to use, and I found this recipe which uses exactly two bananas. 🙂 It makes 8 delicious muffins.
INGREDIENTS:
2 overripe bananas
1/2 C Sugar
1 egg
1 C flour
1/2 tsp salt
1/4 C vegi oil
1/2 tsp baking soda
1/4 C walnuts
DIRECTIONS
1.Preheat oven to 350 degrees F (175 degrees C). Place muffin cups in muffin tin.
2.Mix sugar, oil, and egg until creamy and light yellow. Add bananas and walnuts. Add flour, baking soda, and salt. Do not overmix. Spoon the batter into the muffin tin.
3.Bake for 22 minutes, until toothpick poked in center muffin comes out clean.
