Sausage Stuffed Mushrooms

A delicious appetizer that is always a crowd pleaser.  These are great for big parties, but elegant enough for a dinner party.
About 50 white button mushrooms, stems removed
1 8 oz package of cream cheese, room temperature

1 pound of sausage
1/2 C of mashed potatoes (optional)
1/2 cup of finely minced onions
3 large cloves of finely minced garlic
salt & pepper to taste

Clean mushrooms with a damp paper towel, and remove the stems. Cook the sausage fully (make sure pieces are small) and add to cream cheese, potatoes, onions, and garlic. Mix well. Add salt & pepper to taste. Fill each mushroom cap overflowing with filling. Bake in 450° oven until tops are browned.

These can be made early in the day and cooked off right before a party.
