Tortilla Chip Crusted Chicken Breast

I’ve been trying to lose my last 10 pregnancy pounds, so we’ve been eating a lot of grilled chicken at my house lately.  Today though, my husband informed me he was “sick” of chicken breasts, so I tried this for him (I still had grilled chicken) and it turned out delicious! I still made him eat broccoli though. 😉
INGREDIENTS:
1 C crushed tortilla chips (finely crushed)
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic
1 tsp taco seasoning
2 chicken breasts, pounded thin, and cut into pieces
2 eggs
1 tsp milk
DIRECTIONS:
Mix tortilla chips, salt, pepper, garlic powder, and taco seasoning in a bowl.  Whisk together milk and egg.  Dip chicken pieces in egg mixture, and then in the seasoning mixture.
I fried Shane’s in olive oil over the stove, if you wanted a healthier, but less crispy version, you could bake in the oven at 425° for about 8 minutes.  Enjoy!
