Sticky Apple Cake with Vanilla Bean Whipped Cream

Warm apple cake with vanilla bean whipped cream

My mom’s friend Jim traded me his amazing apple cake recipe for my carrot cake recipe.  Jim’s family and friends ask him to bring this delicious cake to all of their family gatherings, and after making it, I can see why!  The cake comes out of the oven beautifully carmelized, and it is topped with an incredible sauce (which Jim warns may induce a diabetic coma) 🙂  which soaks into the warm cake.  If you’re being good, you could leave the sauce off, but I wouldn’t recommend it.  It’s simply too good to pass up. I topped it off with my vanilla bean whipped cream, which is optional.  Such an easy recipe and SO delicious! 

INGREDIENTS:

Apple Cake Batter:
4 cups of Granny Smith apples, peeled and chopped
2 cups of all purpose flour
2 cups of granulated sugar
2 eggs
1/2 cup vegetable oil
2 tsp vanilla
2 tsp baking soda
2 tsp cinnamon
1 tsp salt

Sauce:
1/4 cup butter
1 cup powdered sugar
1 tsp vanilla
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup milk

Whipped Cream:
1 pint of heavy whipping cream
1/4 cup of sugar
the insides of one vanilla bean

DIRECTIONS

For the cake batter…

Preheat the oven to 375°.  Grease and flour a 13 x 9 inch baking dish.  In a mixer, combine eggs, sugar, oil, and vanilla.  Add dry ingredients and mix together.  Add apples last, mixing them in with a wooden spoon.  The mixture will be very close to the consistency of cookie dough.  Spread the batter in the prepared baking dish and bake for about 45 minutes, until toothpick comes out clean.

For the sauce…

Mix the dry ingredients together first, to prevent clumping.  Over medium heat, cook the butter and milk.  Once the butter has melted, add the dry ingredients, and then the vanilla.  Cook about 5 minutes until the mixture is syrupy.  Remove from heat and set aside.  When cake comes out of the oven, drizzle the sauce over the warm cake.

For the whipped cream, should you choose to indulge…

Scrape out your vanilla bean.  For directions on how to do that, click here.  Pour your whipping cream into a cold mixer bowl and begin to beat.  Add sugar and vanilla and continue to beat until soft peaks form.  Use to top cake when serving.
