Skewers with chicken and pineapple |
Every time I make this dinner, I think of the scene in Love Actually, where Liam Neeson is trying to talk his step-son into eating dinner and he says “Saaammm… I’ve done chicken kabobs!” These are so easy and delicious, and the chicken, pineapple, onion, and red pepper are the perfect combination with the homemade BBQ sauce. Serve with Perfectly Prepared Asparagus, and some romano rice. 🙂
If you are using wooden skewers, make sure you soak them in water first, this will prevent them from burning.
INGREDIENTS:
1 cup of ketchup
1/4 cup soy sauce
1/4 cup of honey
1 tbsp yellow mustard
1/3 cup brown sugar
2 cloves of garlic, minced
1/4 cup pineapple juice
1 can of pineapple chunks
1 red pepper, cut into chunks
1 small onion, cut into chunks
2 boneless & skinless chicken breasts, chopped
DIRECTIONS:
Add the ketchup, soy sauce, honey, mustard, brown sugar, garlic, and pineapple juice together in a small pan. Cook for about 20 minutes over low heat, stirring often.
Place the chicken, vegetable, and pineapple pieces onto the skewers to your liking. Pour half of the sauce into a small bowl then brush the skewers with the sauce.
Barbeque for about 8 minutes, turning often. If you don’t have a barbeque, this can be done in your broiler. Serve the skewers with the remaining BBQ sauce. Enjoy!
